Most don't heat water to the optimal temperature to capture all the flavor of the coffee beans.
They do not disperse the water evenly over the coffee grounds.
They have metal heating chambers which flavor the coffee unfavorably.
They use glass carafes which remain on hot plates. This destroys the flavor of the coffee and carmelizes the coffee in minutes. Or, they use poor quality insulated carafes that don't retain heat and add an artifical plastic or metallic taste to the coffee.

For pour over brewing it is not necessary to preheat the container because the water temperature is significantly hot (190-205 degrees) enough when you start.
It is ideal to use your premium local freshly roasted coffee beans within the first 4 - 5 days of roast date.
If you will not be using the coffee beans within their peak freshness then freeze them in their original packaging (vented bag) within one week of roasting. The quality will still degrade, but at a significantly slower rate than at room temperature.
Make sure to thaw your roasted coffee beans before grinding.
Coffee which is six weeks old and frozen is still better than three week old coffee stored at room temperature.
Grinding the coffee beans to a similar size is essential for great tasting coffee with maximized flavor.

Coffee beans purchased from grocery stores and coffee shops are most often many months old and burnt. The reason the beans are burnt (dark roast) is that burnt coffee does not change in flavor even months after roasting. This is beneficial for the roaster as they can sell months old coffee and the consumer can't tell a difference in flavor. Burnt always tastes the same!
To experience the flavors that coffee is actually capable of delivering the roast must be medium and the coffee beans should be consumed within one week of roasting.
